Bar-B-Q Roast Chicken

Spicy and succulent chicken, cooked in the Bar-B-Que style on coals within brick walls. The smoky flavor and the moistness of the chicken cooked in a perfect blend of spices is absolutely delicious! The chicken meat literally melts in your mouth. Unlike the usual dry bar-b-qued chicken.




Ingredients:

Chicken (whole, without skin with giblets removed) 1
Red Chili powder 1 tbsp
Salt 1- 1 1/2 tsp
Crushed, roasted coriander 1 tbsp
Crushed, roasted cumin 1 tbsp
Green cardamom, crushed 1 tsp
Juice of 3-4 large lemons
Yoghurt, 1/2 cup (optional)

Method:

Wash the chicken thoroughly. Dry and score it with a knife. Now in a bowl mix together all the spices in the yoghurt and apply on the chicken. Making sure the mixture is all over the chicken. Now wrap in an aluminum foil and let it marinate.

Meanwhile, set up the cot for the chicken to cook in. Outside on a cemented area, make a small square by placing bricks around and fill it with burning coals. Now,  put the chicken with the aluminum foil still on, and cook it for an hour (or till the chicken is cooked through. Check with opening the foil and pricking it with a knife) with turning the sides often. Once done, serve it warm with lemon wedges, chutney and yogurt cooler.

*If cooking this way is not possible, then steam the chicken in the foil and smoke it with coals.
