Chicken Biryani





Ingredients:

Chicken 1 kg, cut into 8-10 pieces
Onions 4-5 medium sized, sliced
Tomatoes 3-4 medium sized, chopped
Potaoes, 4-5 medium sized, cut into quarters
Yogurt 100 gms
Ginger-garlic paste 1 tbsp
Oil 1/2-1 cup
Salt 1 1/2 tsp (or to taste)
Red chilli powder 1 tbsp
Whole spice powder 2 tsp
Coriander, roasted and crushed 1 tsp
Cumin, roasted and crushed 1 tsp
Turmeric powder 1 tsp (levelled)
Nutmeg-Mace grated/crushed 1/2 tsp
Chinese salt 1/2 tsp
Dried plums 6-8
Whole five spices (cloves, peppercorns, cardamom, aniseed, bay-leaf) 1 tbsp
Fresh coriander, chopped 1/2 cup
Fresh mint, chopped, 2 tbsp
Rice, 800-1000 grams

Method:

Boil the rice and keep aside.

Heat oil in a pot and fry the onions (on medium flame) till golden brown. Add the ginger-garlic paste and chicken and fry for another 3 minutes. Now add the whole five spices, potatoes and fry a little. Now add the tomatoes, yoghurt and the rest of the spices and cook until the meat and the potatoes are cooked through. Just in the end add chopped fresh coriander and chopped mint. Now in another large pot, put a tbsp of oil then a layer of rice followed by a layer of the biryani masala. Repeat twice and cover with a lid. Let it simmer on very low heat for five to ten minutes then serve.

  3. Biryani k chawal khile khile na ho tou maza hi nahi aata. Your rice are smudged, chipke hue n dry..

    And is that biryani w/o oil? Bcz I cant c any mention of oil in the ingredient list. And who on earth adds CHINESE SALT in Biryani? Please get your food facts right!

    1. Rice can't be mushy (smudged, as you said) and dry at the same time. Rice are mushy due to excessive moisture. And if you see closely, my rice are firm, and not stuck together.
      Where is it written that we can't add Chinese salt in Biryani? It's not a hard and fast rule that one cannot add it. I write what I try and what tastes good. :)

  4. Could you please tell me what you mean by whole spice powder? Does it mean garam masala?
    And also you said we need to add 1 tbsp of whole five spices? Do we add the whole five spices or is there a powder called whole five spices or what? Sorry, I dont know much about cooking but I want to make this and need to get the ingredients right

    1. Yep, whole spice powder is Garam Masala.
      Whole five spices is an assortment of whole spices like cardamon, star anise, cumin, peppercorns, cloves, cinnamon etc.

    2. Um ok so do we make this assortment ourselves or is it commercially available? And if its commercially available then what do I ask for at the store? Sorry for being so buggy but that's how I cook and that's why I cook rarely... I need to be very precise and all that... cant cook by "andaaza" as people mostly do in Pakistan :-/

    3. You can make the assortment yourself, and you can also get it from any shop/super-market. You can get it in small packets as well.

  8. I'm certain I saw a kofta biryani here but I went through the list of all recipes and I think I was wrong. Bas kyun ke mujhe bohat dil chah raha hai wo khanay ka tou shayad iss liye nazar agaya. But thought that since I'm here, I'll drop in another comment anyway and request for that recipe and also just wanted to say what a terrible idea it is to go though all these pictures of food so early in the morning. Bohat mazay ki recipes lag rahi hain.
